A ton of Mouse operated games on the PC and Mac. Speaking of the Mouse, there is also the PS2 Smart Joy Frag which allows a Mouse to act as either the Right or Left Analog stick as well as the direction Pad. Puzzle (Bejeweled) and Rail Shooter (REZ) games work beautiful. There is even a PC "Asteroids" type Freeware game called Spheres of Chaos, controlled with a mouse, the psychedelic colors a must see.

I'll also add that if you have a PS3, the motion control-only games Flow and Flower are pretty good fun. There are some other motion control-only games too I'm sure.

Holy crap the Ascii Grip V2 is so rare the only one I could find was on amazon.co.jp for the equivalent of $115 USD. Too much! I used to have a V1 and it worked great for what it was. I still recommend it for console gaming over other 1-handed controllers. It was comfortable enough for me to play up to level 5 on SMB1 without dying and a few rounds of Tetris. They're not too uncommon and should be available for about $15. I saw one made for Saturn for only a bit more, so apparently they're not too rare either.

The Super Monkey Ball series of GCN would be good for one hand.

Considering Kirby Air Ride consists of only the control stick and A button, you could probably pull it off.

I realise you were looking for a good controller more, but heres a list of 1 handed wii games I own:
Another Code R
Kororinpa
Lets Tap
Mario and Sonic at the Olympic Games
Wii Play
Wii Sports
Zack and Wiki: Quest for Barbaros Treasure

Off the top of my head, Sam and Max Season 1 and 2, Opoona (uses only the nunchuk iirc), Broken Sword, Boom Blox (and it's sequel, Bash Party), Flingsmash, Mercury Meltdown Revolution, Wario Ware Smooth moves (i think), and most of wii sport resort should be one handed only (but i don't own these ones, so I can't be sure.)

There were some other I though of, but im far less sure about those. These include Elebits/eledees, sky crawlers, major minors majestic march and deweys adventure.

Don't take of these for granted, be sure to check out the controls somewhere first. Hopefully there's a good selection there that might be interesting.

What abou lightgun shooters on Wii? Those could be played w/ one hand.

Most of them could at least. Some (like links crossbow training, and iirc, resident evil umbrella chronicles) make use of the nunchuk too because they were designed for the zapper.

I sometimes play DOA Xtreme Volleyball one handed.
