Contra Shattered Soldier (I thought it was good...) and Viewtiful Joe spring to mind. Viewtiful Joe feels best with the GC controller, but you get to play as Dante in the PS2 ones. Viewtiful Joe 1 and 2 are good, but not exactly platformers.
In the PS2 era, 2D platformers were mostly confined to licensed games. There were a fewgood ones, like Kim Possible that featured in one in the PS2 hidden gems article.
You're likely to have better luck with PS1 games. There you can find Tomba 1 & 2, Heart of Darkness (not sure if these ones play well on the PS2), Rayman, the first Klonoa (which is better because sprites), Strider 2, Wild 9, Oddworld 1 and 2, The Adventure of Little Ralph (import), Skullmonkeys...

Definitly agree with you, and also very nice controlls and awesome gameplay.
I played other metal gear games but this one is definitly my fav out of the bunch.

Klonoa 2: Lunatea's Veil is the one original 2.5D platformer on the system. As Brunoafh said, there's Contra: Shattered Soldier (which I love) and Viewtiful Joe 1 & 2 (which I also don't really get too excited about, though it's pretty good).
Otherwise, you mainly have collections: Sonic collection, Mega Man collections, Metal Slug collections.
Blowout is a side scrolling run n gun, but it's mediocre. Alien Hominid is another run n gun. It's ok.
There are also several RPG games with 2D side scrolling elements: Odin Sphere, Tales of the Abyss, and Valkyrie Profile 2.
