Paul Gilbert is one of my favorites.
Been on a Vinnie Moore kick lately myself, he's a bit more "fluid" if you will I guess, not quite the shredder like Marty Friedman or Paul Gilbert I'd say, I guess, I mean his stuff is still like nonstop solo's but yeah! One thing that really stands out about Moore's style though is that it's very melodic at times, his stuff sounds like it'd work as epic 8/16bit tunes more naturally than some others, I guess is what I'm saying. If that even makes sense. It just sounds like awesome VG music sometimes!

Also, I listened to some of John Petrucci's playing today, still the best on the rock scene in this guitarist's eyes.

Dragonforce is pretty bad to me. Soulless shredding and no heart. I almost thought it was a joke band...I mean how the hell can you not be a joke when you rhyme fire and desire 47 times on one album. They can play fast....But that is about it. Every album of theirs sounds exactly the same.

Yeah, typically live they are utterly terrible. Dragon Force completely suck in my eyes. 
Paul Gilbert or just about anyone else listed in this thread would destroy them.

Al Di Meola is probably the best jazz shredder on the planet along with John McLaughlin!

That's because Dragonforce are crap now. Live they are just absolutely atrocious unless they're playing their old songs which don't have copious amounts of tasteless shred. They just do take after take after take after take in the studio on each small part of each solo and then stick them together. I've seen them three times now and I don't think I've ever seen Herman Li not fuck up a solo. He's just absolutely terrible live. It's a shame because they were a decent power metal band before Inhuman Rampage. I guess they wanted recognition so they just went way OTT with the guitar-wank to get recognition. I have no respect for musicians that can't play their shit live. It's pathetic. We can all sound like the greatest shredder alive in the studio thanks to time stretching tools and the ability do take after take. I have massive respect for players like Paul Gilbert, John Petrucci and Steve Vai because they play the most insanely technical stuff flawlessly in live situation. That is the true mark of a great player. Not how fast you can you sweep pick an Am7 arpeggio.
