I would add World Heroes to the Easy fighters category. There's no real combo system and predates the counter systems of later fighters, so the game relies more on knowing your special moves and punishing others for making mistakes. It's a solid way to learn the controls, blocking, and attack commands in an environment where you won't suddenly be crushed by a relentless AI.

Fatal Fury 2 or Special is also a good place to start with SNK. KOF might be daunting for beginners seeing as they need to be proficient with 3 characters. It's also slower than more modern fighters, which is helpful.
SF Alpha 1 or any of the Darkstalkers games are good for beginners to start learning about chain combos.
Mortal Kombat II is good for introducing juggling (the whole combo system) and the idea of using a dedicated button for blocking.

I agree totally on Blazblue! However, I think it should absolutely be under the advanced category. Every character plays extremely differently and that game is 100% combo dependent to really get anywhere. Regardless of the skill involved, it is still my favorite new fighting game in a long time!

I'd sooner see one of the Guilty Gear games than BlazBlue here.
Is there going to be a separate list for 3D? Plenty of fun to be found there as well.

3D definitely should be separate, since they play very differently from 2D fighters.
