For sh!t sakes, this list will be hundreds long, if not breaking a thousand...
The four Komami Deluxe Packs on the Saturn/PS1 are awesome. Don't forget Gradius III & IV on the PS2. How about Ys Books I&II on the Turbographx CD/PC Engine CD? The Caravan Shooting Collection on the Super Famicom?

Oh, I gave some of my favourites. The Saturn/PS1 Konami Deluxe packs (Gradius, Salamander, Parodius, Twin Bee) really are phenomenal. Don't forget the Pinball Hall of Fame series. Pinball and arcade video games have always sat side-by-side, and I'm not saying they're one and the same, but I think you'd at least want to add to your list "The Williams Collection" for PS3, 360, Wii, PSP, and PS2. I can't say "The Gottlieb Collection" is as good as that, but you might consider adding that to your list too.
