Thanks for all the help, everybody! I actually snipped a 360 breakaway cable, strippped its wires, and with the help of some black electrical tape I twisted and connected said breakaway cable to an old hamburger (fat) xbox controller. Worked like a charm. Was able to transfer everything and get UnleashX up and running.. Now to find some emulators. (I'm looking to go the AID route.)
Again - thanks for all the help, guys!

I recommend soldering if you want anything more than a temporary connection.
For emulators, check out CoinOps Reignite, really great MAME emulator for Xbox 1.

Thanks for the suggestion - I'll try it tonight! I'm rocking MamedoX now and, while its great for the few games I got working, I'm running into a lot of Malloc errors.. If CoinOps works better, I'll be in KoF heaven...

For KoF use KawaX or Final Burn XXX
PSone, Xbox, PS2, DC, SS Mod Service, PM for details

To tell you the truth soldering is the best you can do for a mod. You gain experience and you will appreciate it more when completed. But if this is a one time thing you can just get the converter but if you plan on having a soldering iron in case you can get a kit with some liquid flux and a pencil tip aswell for the iron. You can pick it up locally at radioshack.
