You actually have many of the PS1 RPGs I'd recommend, especially Breath of Fire 3, Wild Arms, and Chrono Cross(I hear a lot of people recommend Vagrant Story as well), but I'd also suggest checking out Xenogears and Star Ocean: The Second Story. You might also be interested in Legend of Mana, Brave Fencer Musashi, Legend of Dragoon, and SaGa Frontier. If you like strategy RPGs, Final Fantasy Tactics and Front Mission 3 will probably interest you a great deal. I can name other RPGs that might interest you, but I don't know if you'd call them "must plays" of the console.
Thanks for your list
I like RPG's mainly after Zelda ,Secret of Mana and Final Fantasy 7.
But due to their length I never actually got around to playing a lot of them
This is another reason why I want to pack some of the games away
because over time I've become a hoarder of games instead of enjoying them and playing them I'm just a collector.
So I want to get back to the good stuff about games which is playing them.
Funny thing I haven't completed a long console game since probably Zelda the Wind Waker and that took me 3 years due to breaks inbetween.
Also partially because I had / have too much choice I kept jumping about games.

I admit to not being very well versed on PS2 RPGs, though Radiata Stories might interest you, as might games like Tales of the Abyss.
I'll look into Tales of the Abyss

Fighting game wise, on the PS1 you have the great non-traditional Bushido Blade series, though beyond that many of the best stuff was also on the Saturn or even the Dreamcast, and folks will likely point you to those versions instead. On PS2, the Street Fighter Alpha Anthology makes for some good times, and if you can find a copy, the Samurai Shodown Anthology is worth checking out. And if you're at all interested in the Virtua Fighter series, there's Virtua Fighter 4 and Virtua Fighter 4: Evolution...I'd go with the latter, if I were you.
I actually spent most of the time on the Sega Saturn for fighters during the PS1 era. The only reason I have so many PS1 fighters is because I was filling in the gap of having packed away my Sega Saturn with the PS2 and PS1 being 1 machine instead of 2.
I think I'll pass on Virtua Fighter 4 simply because Virtua Fighter 5 is out on the 360 and there isn't that much difference unless you are a VF purist.
Although I'm fond of Virtua Fighter 2 and 3 the most.
I have Samurai Showdown Anthology on both the Wii and PS2.
If you don't have it for any other consoles, why not check out the Metal Slug Anthology for PS2? I prefer it to the Wii version, since you don't have to shake the remote to throw a grenade on the PS2.

It's too bad you don't seem to be too much into horror games, as I could point you to quite a few on both consoles.
I'm open to suggestions any suggestions when it comes to good games you never know when a good game just passes you by.
I actually have resident evil 1 2 3 and resident evil 4 on the gamecube
I have the Wii version of Metal Slug Anthology
I was just thinking any chance of condensing this list down theres loads of games to play here =P.
Maybe a top 5 ?
