Sure. In graduate school most classes require you to work in groups. One of my groups included this kid who although awesome, was full of himself. It was a little sad because half the people just hated on him to hate on him. It got to he point where he wouldn't drive his bmw to campus because he was tired of people picking on him.

So anyway, we get paired up on a project, he slacked off, and I called him out for not contributing. From there out, he pulled his weight and we became friends. He knew my interest in cooking, and I catered for he and his girlfriend a few times. I had no idea that his father owned Dragas Corp., which is a main shareholder of YUM! Brands. After we got our mbas, my friend mentioned that he was interesting in opening a restaurant, funded by Dragas Corp and YUM! Brands. My concept was haute cuisine without intimidation. I still have the seasonal menus I created, in French and English.

Anyway, the restaurant would have had four seasonal menus, white linens, a sommelier, and would be pretty high class but without snobby waiters. The test location was to open in Virginia Beach. After tons of research, we both decided that there just wasn't a market in the test area that would reflect what sales the restaurant would make in other areas. I'm sure the funding is still there if I'd like to open a restaurant in a different test market, but I've got too great a job right now to pass up on. Maybe after I retire.

But that's about how things went down.

If you could franchise out that concept, you'd probably make a killing. Was YUM looking to just loan out money, or was it looking for something closer to equity in the restaurant?

Wow, finally, someone mentioned it. I have a few friends from the Louisanna and Mississippi area, and they are total snobs about BBQ. I assumed someone would be able to call it eventually :P

I can't count how many times they bit my head off for using a store made mixed spice rub :P

In the interest of civility, I suggest that all barbecue discussion be reserved for a separate thread. Before you know it, the damn yanks will start chiming in, thinking it's a grill or a verb.

Well...a "Yank" did bring it up, but yes I was referencing real low and slow BBQ, but I guess I could be called a grilling snob too. It's actually hard to find good real BBQ in the north, so thats probably the main reason why I'm a snob about it. You wouldn't believe the things people do to ribs up here.

Oh, and avrame why are you buying premixed spice rub? Its like the easiest thing in the world to make. :D

I've had BBQ in some of the best places in the south and midwest. Know where the best BBQ is?

Syracuse, NY.

Dinosaur BBQ.

Second best I've had? Smokin' Al's in St. Louis. A damn close second.

Good Morning America? Internet polling? Come on!

I'll confess I've never eaten there, and likely never will because I don't eat pork anymore, but the closest thing to an objective way to determine the quality of a barbecue joint is how many times it has burned down. I know that Archibald's in Northport, AL has burned down at least twice. Can Dinosaur BBQ beat that?

To clarify, I have eaten barbecue from Archibald's.

Then Chicago should be the home of barbeque, no?

I know they've won numerous national awards, including from chefs, food-related networks, and the like. The GMA poll was the first I found doing a quick search - it wasn't a very good one, I guess. Still, I fancy myself a bit of a connoisseur of BBQ, and they really are the best I've had.

No. That only happened once, and I am not certain that there were any barbecue joints in the affected area.

I still think I'd making a killing if I opened my own restaurant, but I couldn't be happier with my current career path. More than likely I'll open a restaurant when I retire. Lord knows I have time to plan....Hopefully.

YUM! was looking to loan, Dragas Corp was looking closer to equity. Dragas Corp just chose the wrong location for a test restaurant, so the demographics in a small location spelled doom for any progress. This happens across the board in retail, but to YUM! Brands, even after over a decade of catering and being a business owner doesn't mean squat. No ill will, it's just business.

Seriously? Of course there were barbeque places. And if there were so many that burned down in one town, then it should have the highest average quality of anywhere.

Basically what I'm saying is you have flawed logic. ;)
