Keep the one you like most. FFVIII is never going to make you rich or anything - it's already had a PSN re-release, I believe.
If the black label looks good on your shelf, keep it. If the GH copy is in better shape, keep it.
Or keep the black label box, put the GH copy in the case and sell what's left as a hybrid.

How bad are the scratches? If the game runs fine, I wouldn't worry about it. Personally, I can't stand the ugly green color on the labels of PS1 Greatest Hits games. If that doesn't bother you, than I can't really make a case for the Black Label version.
Between these two versions of a game it pretty much all comes down to looks for me (though in particular cases Greatest Hits versions will have additional content, so it gets tricky there).

If it were me, I'd keep the black label and sell the Greatest Hits unless the scratches were so severe that they affect the game.

They cry at night. The PSN rerelease murdered the resale value of that game. I would keep the black label version. Minor scratches are easily repaired! The black label version is more attractive on a shelf, IMO.
