Of the top of my head:

Die Hard Arcade
Dead or Alive (Japan)

2D:
Astal

I believe Astal is all hand-drawn.
NiGHTs looks good, but the graphics isn't the main draw. I guess you could include it. Burning Rangers also runs on the same engine and looks pretty good.

When it comes to the graphics on the Sega Saturn... I really don't consider them to be like "the best DETAILED and REALISTIC"

Most of the games graphics are more pleasant on the artistic side (especially in house Sega games). You ever notice that when you see a screen shot of a Sega Saturn game it is very distinct... there is NO second guessing that this screenshot is from a Sega Saturn... maybe it's the use of quads instead of tri's... or the odd colour palettes usually seen, or maybe the tricks to fake certain effects like transparency...

seriousily, I enjoy those fake transparencies... all the games just look awesome in their own respect...

i.e.

Panzer Dragoon series - colourful, organic, and oddly spacious
Burning Rangers - feels very closed in and unique... I mean just look at this:

...
meh, I'd go on, but I'm tired... sorry

I think there are alot of impressive technical games, but these are the ones that stand out in my head.

For 2D game

Radiant Silvergun (best 2D ive ever seen on saturn, and ive seen most)

Soukyugurentai Otukuyo

Astra Superstars (the water stage may be the absolute most impressive on saturn, never seen anything compare on dreamcast)

Mr. Bones

Marvel vs. Street Figher

For 2.5D
Taramaru (got $400 to waste, buy this game, only 10,000 copies made, and its pretty good)

Funky Head Boxers (2.5D i think, wierd game, but i love it)

For 3D

Saturn Shenmue (i dont think there is a playstation 1 game that beats this in 3D)

Sonic X-treme (yeah, i know, another un-released, but the reality is that it works and its beautiful. Demo should be available on undergound)

Virtua Fighter Kids (more impressive than virtua fighter 2)

Nights (i love its look)

World League Soccer '98 (note, this is NOT worldwide soccer, this was never released in the USA, it was realesed at the end of '98 and its the best footie game on saturn, and very impressive)

D-Xhird ( http://segagagadomain.com/saturn2/d-xhird.htm )

Dead or Alive

All Japan Pro-Wrestling featuring Virtua

There is alot more, but these are off the top of my head.

Hey, don't forget the mixed-mode 2D/3D games that the Saturn has an edge on over the PSX. Yep the Saturn can display both sprites and polys, whereas the PSX can display polys and... flat polys (which are handled differently from straight sprites).

Soukyugurentai (Terra Diver), Thunderforce 5, and Clockwork Knight 2 are great examples of this.

Virtual On is a pretty sharp looking game for its time, but it doesn't stand up next to Nights and Burning Rangers. Virtua Fighter 2 is great graphically speaking and is dirt cheap, same goes for Sega Rally. Manx TT Superbike also looks really good.
