Jet Force Gemini is a surprisingly good title.

If you are playing with friends then these are a must in my opinion

Mario Kart
Goldeneye 007
Smash Bros.

NFL Blitz - I'm not a big sports fan but it is always fun to break the rules.
San Francisco Rush is fun and I love the stunt mode.
Star Wars Episode I Racer is pretty fun too.

BTW, I didn't see if you mentioned if your N64 has the expansion pack..if it doesn't some of the games mentioned won't work at all and others won't look as nice.
