DK64 could have been fun, if they made all the collecting optional, and if they gave you some guidance as to where to go next, and if the frame-rate was something I could look at without getting nauseous. Compared to the Banjo games, Conker, Mario64, and Rayman 2, it's a piece of shit. I will admit that it's at least recognizable as a game.

Make sure to get the S-Video cable, better color separation over Composite.
Might get lucky and find a Gamecube Component cable for five bucks with this mislabeled SKU.

These are my favorites that I don't think have been mentioned yet.

Sin & Punishment (import)
Resident Evil 2
Gauntlet Legends (more fun with 2-4 players)
007: The World Is Not Enough (not as good as Goldeneye but still satisfying gameplay if you want another Bond game)
Harvest Moon 64 (if you like the HM series)

Most of the best games have already been mentioned here. Maybe it's been mentioned and I missed it, but one often-overlooked gem on the N64 is Jet Force Gemini. I'm in the minority in that I actually dislike most of Rare's N64 releases, but JFG is fantastic as far as early TPS games go. You've got free range of movement that feels like an N64 platform game, but the shooting action often feels like an on-rails arcade shooter. Very much ahead of its time IMO.

FWIW, the Rare games a I like are the ones that usually get ignored: Jet Force Gemini, BlastCorps (a.k.a. Blast Dozer), and to a much lesser degree K.I. Gold.

You either like Harvest Moon or you don't. I don't like the new ones but the old ones are really good. The only problem with HM 64 is it can be about $40. That was the last time I checked, though. It could've gone down by now.
