I will second this. If you want the MOST performance start with a super lean distro such as ArchLinux or Gentoo. That having been said I think that 1.10ghz, 768MB RAM and a 40GB HDD should be good enough to run Ubuntu.
I've got an old MX4000 that's PCI I can use, I just technically don't own it so I can't hang on to it forever.

You could keep that older drive for WIN 98-DOS Retro EMUs.

Ubuntu's minimum recommended specs are 1gb of RAM and a 1ghz processor (which you have.) It'll run alright, but going with Xubuntu will save you lots of overhead on RAM and will be very responsive with that processor.

I suggest trying LUbuntu. It's based on the LXDE which is a light-weight Desktop Environment like XFCE (apparently it's more light-weight).

Dual drives and a boot manager make that a bit unnecessary though. What little help I can find involves command line. I know NOTHING about command line or linux; hell less than a week ago I'd never even used the damn OS.
I'm about ready to stop tearing my hair out and switch this thing back over to permanent XP duty, any ideas?

Hit "Get EnvyLegacy". Open the .deb. There it's installed, easy as pie.
