Carlin, without a doubt. Best ever.
Also a big fan of Steven Wright, Louis C.K., Richard Pryor, and Chris Rock. Many of the other folks y'all have mentioned have provided me with many laughs as well!

Mitch Hedberg is easily number 1. After him, Louis C.K., Jim Gaffigan, George Carlin, Jerry Seinfeld, Ron White, and probably some others I'm forgetting.

I watched "Bill Cosby: Himself" a couple of years ago, and I confess that I was disappointed. I had seen the bit about giving his kids chocolate cake for breakfast before, and it was hilarious, but when I watched the whole thing, that was really the only part that made me laugh.
I pretty much like a lot of the guys who have already been mentioned, so I'll try to only list ones who haven't.
I've only seen him on Comedy Central a couple of times, but I really like Eugene Mirman. I check his site regularly for tour information, but he seems to mostly just stay around New York. Seth Meyer is a lot funnier doing stand-up than he is on SNL, in my opinion. Also, I'm willing to bet there aren't more than one or two other fans on this board, but I do really like Kathy Griffin.

Has anyone besides me here actually done stand up?
I got into stand up in an odd way a few months ago, but I'm all about it now. I've performed Studio B in Chicago, Chicago center for performing arts, and Big Mouth Club near DC. NC sucks for comedy unless you live in Charlotte, which is a 5 hour drive for me.
NC is missing out because I even have a few retro game jokes.

I can't list a favorite, but...
Mitch Hedberg and Steven Wright are the best cerebral comics I've seen.
Galifinakaus(sp?) is an improv genius.
Bill Cosby is probably the best story telling comedian of our time.
Richard Pryor, Bill Hicks, George Carlin and the recently deceased Robert Schimmel were a few of the greatest shock comics.
Bob Sagget deserves an award for "The funniest comedian you thought sucked".
And of course, everything Julius Marx did was hilarious.
