Oh yeah, P3 is definately a long game. I ended up clocking around 100 hours on my save file upon completion, and there really aren't any time consuming side quests. Instead, you have the aforementioned social interactions.
A piece of advice for you: save every time before you go into a dungeon. The game has a habit of throwing enemies who can use instant death at you when you start to get cocky. The initial instant death spells have a 20% chance of success, while the later ones have a 40% chance (modified by weaknesses). There is an item you can get that will nullify an instant death move that hits you, but you can still get overconfident and forget to stock up on them. And the real killer of those moves is if they land on you, it's game over.

It's almost a little intimidating. Let's just hope my interest level remains the same for all of those hours. I'm assuming the game has decent pacing.

So I started Persona 3 over the weekend and love it so far. I feel conflicted though, because I set in on Easy just to try it out with the intent of starting over on Normal. Unfortunately I got sucked in and lost track of time, so now I'm about five hours in.
Would I be doing myself a disservice by continuing on Easy? Is the game that much challenging on Normal?

So choosing easy difficulty means two things: you gain more experience, and you have those items that give you a continue at a game over. Really, the more experience thing is probably not going to make a huge difference, as grinding in this game isn't too difficult. And the 10 continue items can be burned through if you want, to make the game more "challenging" (i.e. more punishing when you forget to save and get instant deathed). If you feel you are farther in than you would like to restart, then I'd stick with easy.
