I can't think of many games are crazy overlooked as Cubivore (I got it when it was NEW) but here's some of my personal picks of games I dont think a lot of people would normally have or give a chance to.
Pool Paradise - this is an extremely good Pool (billiards) sim. Every type of pool game imaginable is here, the music is fun and relaxing and it's a great time with friends. I actually contacted Ignition Entertainment asking when the game would be available, and after some back and fourth communication, I actually bought my copy directly from them several days before the street date. This is the only time I've ever done anything like this and have to say they were the best people to deal with all those years ago. Kudos to them.
Eternal Darkness: Sanity's Requiem - This one was developed in my hometown of St. Catharines Ontario by Silicon Knights way before they made bad games. ED is a action horror game that actually screws with you, the player. Definitely worth checking out.

Indeed, though, why would they put an 'N' at the end of GC? I mean, why don't we just arbitrarily put an 'X' on the end of PS when we talk about the original PlayStation?

And in the UK we had a magazine (our best Nintendo/Gamecube magazine by far actually) that was called NGC Magazine. So go figure.
I'll never call it GCN, because frankly it makes no sense to me.

Aggresive Inline I'd say is overlooked. I thought it was great and very close to matching the quality of the Tony Hawks games.

Chibi-Robo is an excellent game that I rarely hear on top GameCube games lists.
