The Donkey Kong Country games on Super Nintendo. Great graphics, great music, and perfect gameplay.

Well I hate to do it, but the Zelda franchise is still one of the very few that can still convince me to pickup a system just for a single game. When WW came out, I finally got a GC, and when TP was coming out along with the Wii I was all over that. Fast forward a few years later and some crazy craigslist debacle with me losing my Wii... I will say that more than likely when Skyward Sword comes out I'll pickup a Wii again for that.
Metroid can still do that to me too. Despite not having a Wii these past few years I picked up the Trilogy collection and am really looking forward to playing that. The Metroid Prime games were probably some of the best gaming experiences I've had since my childhood, because somehow those games just captured that vibe... I felt totally lost in its world and like a kid again playing those games, especially the first one. They just completely blew me away.
After that I'd say the classic Megaman line comes to mind. I was so overly stoked about MM9-MM10 it was unbelievable, and somehow managed to get all achievements for both games. It was a blast playing those and I'll often go through the old games on the collections from time to time, I've beaten these games too many times to count. I could maybe say I feel the same about the X line, even if I think the quality dropped a lot after X3 and even more after X4, but yeah... this series seems to be dead as of now.
Metal Gear Solid is another good one and I don't really get into the spinoffs, although I'd love to play Peace Walker sometime. Aside from the spinoffs, I'd have to say I like the fact that Kojima/Konami take their time with this series, unlike most of the trends today, we get sequels for new IP's on a yearly basis... it really just kills the novelty in some cases. There's no anticipation there. So the wait between each of the main MGS games feels just right.
Castlevania is another one, although I have to specify and say the 2D line. I can honestly say I do not keep up with handheld gaming at all, however I always keep tabs on the Castlevania games and get them the day they come out. Absolutely loved all the DS CV's.
The 2D Sonic games are some old ones I like to revisit pretty often as well. So fun to just blast through those games.

I've only recently gotten into it, and oddly, my life feels the richer for it. One of the most novel, enjoyable series I've come across.

As I've said many times before by absolute favorite game franchise is Wing Commander which is unfortunately deader than dead.
Other than that it's the usual suspects, Castlevania, Mega Man, and Metroid are my big three.

Metal Gear Solid: I love the story, and so far, it's never let me down with a bad game. MGS3 remains one of my top 5 favorite games.
Half Life: Same as above, but replace MGS3 with Half-Life 2.
Sly Cooper: Fun, and full of variety. Also, the characters are actually interesting, unlike the case with most platformer characters.
Ratchet and Clank: These games just have so much fun, gameplay and replay value in them, it's insane. I've spent probably 100 hours playing R&C 2 and 3.
Call of Duty: I'm sure I'll take flak for this, but I do love this series. To avoid strife, I shall avoid listing the reasons I find this series fun.
Halo: ^^^.
