I have a boot camp partition on my macbook running 7, but before a reformat I had XP. It runs great but I prefer XP, only because at the time when I installed 7 a lot of the programs that I use were not supported on 7. If you plan to use your machine for emulation I would recommend XP.

For old games, just use Crossover mac, or wineskin. I use it to play Nox, Red Alert, Rollercoaster Tycoon, Rollercoaster Tycoon 2, Dungeon Keeper 2, Age of Empires 2 on my mac. The vast majority of old games work in some sort of wineskin/crossover/cider port. Hell you can even get Call of Pripyat running in mac via Wineskin.
I wouldn't even bother getting windows on your mac without trying to see if you can virtualise it first. The funny thing? The first 6 games I mentioned run better on my mac through some kind of virtualisation than they do on Windows 7...

On my Macbook Pro I choose Window 7 Ultimate 64bit. It runs just fine and does what I need it to including new and old school gaming.
I would rather have something up to date and more functional that the old school XP even if it means sacraficing a few FPS.
