Doesn't the level design and bosses look a LOT like the original?
Not necessarily a bad thing as long as you aren't expecting a fresh game.

NiGHTS on the Wii -- Look Familiar?
^ It's the whole it's on the Wii so it must be bad graphically, follow the crowd coz they have no discerning tastes of their own. Some bits do look pretty crappy tho (A-life) but the main game is great.
I for one am happy it's so in keeping with the original, and I do quite like the music too. I can understand totally why others would want more of a change tho.
The one thing that worries me is the slowdown that I've seen in a few videos. I'm not a framerate whore by anymeans, hell I love Guardian Heroes which seems to slow down to a crawl on two player, but I think a smooth framerate is needed for the kind of smooth lovely flight NiGHTS has. Hopefully that will be ironed out.
Still gotta find a Wii to play it with too.

the other thing is that in the case of these over the top fantasy type characters, too much detail, grittiness and bump mapping would look stupid and take away from the imagination

I, like most other people I have experienced, am excited yet apprehensive that Sega could screw this one up. This round of videos makes me think that they are trying to put a little more polish on the game, especially after the release of SMG (mmm mama). However we will see very soon what the final product will be given that the game ships in a few weeks...
