RISK is probably one of my favorite board games, but I don't get to play it very often.
Is there any console versions of the game that do the "real thing" justice and are relatively easy to play?

Every version I have played has had some bad AI problems. But out of them all I would probably go with the Genesis version. It may not be the best but it has a neat alternative battle view. If pc versions are cool, Risk 2 is your best bet.
However once I was introduced to the Command and Colours system for war board games, I have not gone back to play Risk. Memoir 44 for WWII and Battlelore for Fantasy/Hundred Years War.
Actually now that I think about it, there might be a VASL plugin for Risk. Let me check.
Ammenduem - Actually you can play it on VASSAL, VASL is the straight up ASL version. To explain what all these acronyms mean:
ASL is Advanced Squad Leader - what many consider the be all end all wargame
VASL is Virtual Advanced Squad Leader - ASL online
VASSAL is simply the program that has grown from VASL - I honestly cant tell you what it means I have forgotten. However it allows both real time and Play By Email (PBM) gameplay for most of the games you can play in it.

EDIT: Try getting "Risk II" by "Deep red games". It's made in 2000 and I can't find it for sale, so I'd say it counts as abandonware... Maybe you can find it somewhere.
