It's funny, I was writing a post about the head tracking and was using Mechwarrior as a reference but then gave up on it. I like the idea of being able to turn your head to look out the side, but when you're using a TV screen it becomes hard. If you want to use a single screen you really need an old style VR helmet. Otherwise the sensitivity of looking to the left or right has to be so high (so that you can turn while looking at the TV) that you'd have to hold very still while playing.
Totally, as nice as it'd be doing a 90 degree turn just plain won't work. But you could at least expand the field of vision reasonably. Even if it were just used to put ui elements off screen it could be a interesting try at making things more immersive.
Thinking about it more I remember when I played Heatseeker all the acrobatic crazyness in the game caused me to turn my head to the side and whatnot instinctively. If that sort of reaction could be integrated with the game somehow it'd be pretty impressive.
