I'll mention one game from each system not yet talked about:
SNES
Rtype 3 on SNES is one of the best shmups on the system - not only that one of the most graphically/sonically impressive. The heavy metal soundtrack is really shocking considering the SNES 64kb of sample ram.
TG-16
Blazing Lazers was one of my most treasured TG-16 games, and it still stands up fairly well. Worth emulating anyway. Great tunes!
Genesis
MUSHA. Its awesome in every way. Pushes the Genesis pretty hard, and its damn fun.
3D0
I really enjoyed Total Eclipse, one of the first 3d shooters. You can pick this up for Playstation as well as Total Eclipse Turbo. Contains absolutely awesome shred guitar soundtrack.
Playstation
Internal Section is a little-known Square 3d shootemup that looks great (runs in hi-res) and is quite a bit of fun. A very similar game, Nanotek Warrior is also quite impressive.

I always hear about how great this is. It's sitting down at my local game shop for like 5 bucks. Guess I should get it. It just looks so bland from all the screen shots I've seen.
