Well it's considered rare and usually doesn't come cheap, but who knows you might get lucky and find it somewhere cheap from someone who doesn't know its value

Course you could always get the re-release on the Nintendo DS, but we're taking SNES games here
Oh, one more thing, if you intend on buying and playing rpgs for the SNES, keep in mind that the cartridges may need a battery replacement if you want to save your games. That's one of the downsides of playing these older games

GamerforLife threw in some excellent choices for you to check out. I'd also recommend a few Hack N Slash titles to round things out. Stuff like King of the Dragons or Knights of the Round.
As for Beat 'Em Ups, I almost never see the Rushing Beat series recommended. Their American counterparts are decent games...not as good as the Japanese version, mind you, since the plot was ripped to shreds, but multiple characters, unlockable characters, branching paths, and some interesting and unique gameplay ideas make them a fun series to play with. In the US they're known as Rival Turf, Brawl Brothers, and The Peace Keepers.
I'd also second GamerforLife's suggestion of Konami and Capcom's licensed platformers. Even I enjoyed Capcom's Bonkers game.
If anything, RPGs will be the toughest thing for you to collect, as they tend to be the most expensive genre on average. They are longer games, so more game for your buck I suppose, but having to cough up $40 for a big name title can be a pain, and that's about...half of what Earthbound will cost you. Still, if you can stomach the price, here's a few to check out that I don't think were mentioned yet:

Secret of Mana
Super Mario RPG

F-Zero is a good deal. You can find megaman X and TIT a little cheaper online, but that's up to you. I'd grab TIT (Don't say anything......) though for $20 since you're gonna end up paying around that much for it anyway.
