I agree, Capcom was once a company I loved. These days, they're just kind of meh. The only games I've been interested in are the versus games, but that is primarily due to the incredible amounts of fan service that is in those titles.
Resident Evil 5 lost a lot of RE 4's charm. No merchant, no shooting mini-game, crappy forced co-op, a story that took itself too seriously(RE 4 seemed more self aware of its own cheesiness), a chapter select that took a lot of the game's challenge away(cause you can replay chapters to grind for cash), boring main characters(I don't ever want to go on another adventure with Chris or Sheva again, but sign me up for Ada and Leon) and why did we get some nobody named Sheva instead of Chris' sister? Oh, and don't get me started on the boulder mini-game with Chris, which is one of the stupidest things I've ever seen in a video game. This is really all one man's fault, Jun Takeuchi. He sucks
Just you wait though, Capcom has a habit of being lame for a while and doing nothing more than pumping out rehashes and then out of nowhere they bring out some game that revolutionizes everything and ends up on everyone's game of the year lists. It's the usual pattern with that company.

I like Resident Evil 5 way better than RE4. There were way too many mini-games, weak story, babysitting, and I didn't like Leon's character.
I think Capcom is not creating as much original games as before because if you fail a big budget game now days you might go out of business. Besides people will buy a game if they're familiar with the series.

RE 4 had one mini-game. It was a shooting gallery, unless you count quick time events, which RE 5 also has plenty of. I liked that RE 4 had a stand alone story. RE 5 tries to wrap up the whole series story and does a pitiful job of it. Apparently, they didn't even think it was important enough to bring in Claire Redfield for this big ending they were going for, just some nobody named Sheva instead. RE 4 handled the "babysitting" much better than the constant "babysitting" you do with Sheva in RE 5. You only had to worry about Ashely in some parts of the game and I loved how in some areas of RE 4 you could just hide Ashley somewhere and not even have to worry about her. And you didn't have to worry about her actually dying like that idiot Sheva. The storyline that the president's daughter was kidnapped was garbage. I mean, its not like i've ever seen this before. Especially to a third world country like that and sending one person in to get her was total crap. It lacked realism. Resident Evil 4's quick time events were just awful. After destroying your controller with button mashing not once but at least 3 or 4 times to avoid boulders and living statues, then you had to dodge everything else too. At least in Resident Evil 5, you didn't have to do this that much. I lost interest in RE4 because there were so many of these quick time events.
When it comes to RE4 and its babysitting, that was the biggest crap in the whole world. When you didn't have this annoying little brat constantly whining about something, she is either being taken away or being completely useless. Ashley can die too you know. Hiding wasn't available a whole lot so it wasn't very useful. You know I like how Sheva could actually shoot the zombies, all Ashley ever did was cry out in her extremely ugly voice. I like how Capcom actually introduces meaningful characters into the series. Bringing Claire into the game would be cool but doesn't make much sense.
And as for Leon, his hair doesn't count as him actually having character. Having emo hair may be popular with some people(disappointing to say the least) but it doesn't belong in these types of games. Also I hated how they made Leon look like some type of super hero being able to jump through lasers or breaking what remained of the atmosphere by his lame one-liners. Chris actually behaved like a normal character and not like a complete joke.
The Shooting Gallery sucked.

A couple of points I'll note about RE4 and RE5:
Sheva's shooting at zombies seem to consist mostly of the AI shooting me in the back. Ashley's consisted of mostly standing there.
Quick time events suck in any situation, be it knife fighting Krauser or punching a boulder.
Leon had stylish hair. Chris looked kinda like a monkey on steroids. At least Leon cracked a lame joke or two. Chris was just kinda there with his "I have a job to do" line.
Leon played like a superhero, with stylish and practically impossible moves. Chris played like a superhero as well, punching a boulder out of the way while breathing toxic fumes in the middle of a volcano.
Kidnapping the president's daughter is an overused plot point. So is terrorism.
RE4 had an undead Napolean midget. RE5 had a sexy vixen who had little personality beyond being a sexy vixen.
The voice acting in RE4 was over the top. The voice acting in RE5 was quite often deadpan(again, "I have a job to do").
RE4 had a shooting gallery. RE5 had an action-figure dispenser. Both had a Mercenaries mode.
Both featured an ethnic female lead.
Both featured bag-headed fellas wielding chainsaws and large black men with mini-guns.
Also...you're arguing for realism in a game where people's heads explode into tentacle monsters, birds carry money, and a man can fit several sixty foot long multi-jointed legs under his robe? Versus a game where you fight a giant with a minigun, take down giant insects, and fight a massive tentacle monster in the middle of a volcano after escaping a violent planecrash unphased, only to be rescued by helicopter in the nick of time?

I honestly loved the whole "Rescue the President's Daughter" story of RE4. It added to the cheese, and honestly - I friggin' HATE when Resident Evil tries to be serious... because no one is going to be able to take it seriously.

You know what I loved about Ashley? She didn't fucking use my healing items and ammo. She just hid in trash bins like a good little girl. A character who is aware of their uselessness is far better than a character who is useless but thinks they know how best to use my items.
Again, this is another issue that could have easily been avoid with an inventory system that didn't suck complete ass. If I didn't HAVE to give Sheva my items, maybe I could have lived with it. Also - Gambit system. If you are going to force an AI partner on me, at least let me customize their AI.

I like the inventory screen in Resident Evil 5. It seems appropriate for a survival horror game. After all, having to organize and access an inventory in real time is so much better than having the entire game go on hold while you take your time and screw around in your inventory. This feature really helped RE5 to go above RE4. I actually like it when games in series make some type of change in their setup. Change is not always a bad thing.
