^^^ thats a great one! Love the Alien in the pot... surely a jab at Capcom's Alien Vs Predator.
I also love Nicotine's stage from Samurai Shodown 2. The fog and lights really set an erie mood. Hanzo's stage from the same game is great too. The fields of cotton or whatever that is in the background look really cool and artistic for its time.

The river raft one from Soul Blade always impressed me. It's a fully 3D background in a proper 3D fighting game on a console that doesn't suck for the first time! Woohoo! That background was always a favourite back in the day.

I like the backgrounds for Street Fighter Alpha 3 like M. Bison's stage, the one with the skull in the sky and I like most of the backgrounds in the Fatal Fury and KOF games. The SF2 games have a lot of nice backgrounds as well.

Late to this topic, but you already mentioned all of mine LOL. Darkstalkers really is one of those games that you can love just on an artistic level. Vampire Savior had some of the best backgrounds I've seen.
Tower of Arrogance involves you fighting on the side of a building, defying gravity as a helicopter, busy city street and sea of skyscrapers can be seen below you.
Iron Horse, Iron Terror has you fighting on the Iron Horse, a demonic train conducted by a skeletal man. The train has mouths, eyes and various other facial features pop into and out of it.
And the most recognizable, Fetus of God has you fighting in the presence of a gigantic, demonic fetus whom final boss Jedah is trying to make into the new world's ruler.
