Gundam Wing: Endless Duel
There's this stage inside a space colony that you can see the buildings and trees on the back going on into the distance of the colony ring. Other stages are also cool looking.

Thanks everyone...

I love Ken's background in Street Fighter Alpha 2. Morrigan, Felicia, Captain Commando, Linn Kurosawa and a few others make their appearance.
Vampire Savior had some of the best backgrounds I've seen.
Tower of Arrogance involves you fighting on the side of a building, defying gravity as a helicopter, busy city street and sea of skyscrapers can be seen below you.
Iron Horse, Iron Terror has you fighting on the Iron Horse, a demonic train conducted by a skeletal man. The train has mouths, eyes and various other facial features pop into and out of it.
And the most recognizable, Fetus of God has you fighting in the presence of a gigantic, demonic fetus whom final boss Jedah is trying to make into the new world's ruler.

Nicotine's stage in Fatal Fury 3 has a sign in the background that says "Joy Division". There was another band's name in a level but I can't remember who it was or which SNK game. SNK must have been run by some pretty cool guys.
I've got my crown and I've got my scepter.

Did somebody say Joy Division?

(Before you say it - yeah, I know, bleh bleh bleh)
Guilty Gear X's and all revision's backgrounds. The cool thing is that they subtly change with each release.

Damn, I was gonna make a thread like this later today called,"What are your favorite fighting game stages?" Oh well.
The two stages I'd call my favorites are Fallen Colony from Tekken 6, and Boss I-no's stage from the Guilty Gear XX series, with the Midnight Carnival theme.
Fallen Colony is just beautiful, with everything in ruins and jets flying across the sky, coupled with a badass theme.
Boss I-no's stage is a more dark stage, looks like hell with an endless stream of water on the ground. Coupled with its respectable Midnight Carnival theme, it makes one badass final boss stage.

I always loved Sakura's background in SF Alpha 2. The detail is amazing. If you've been to the Setagaya area of Tokyo, then it feels all the more real since that stage's background is based on a typical Setagaya neighborhood.

Also, there is a background in Alpha 1 that takes place in front of Japanese convenience store. The shop is called "Son Son" which is an ode to an old Capcom, at the same time it's a parody is Lawson, which is a very large chain of convenience stores in JApan. The attention to detail in that background is great, too. Many subtle references to JApanese culture that always make me snicker. The building next to the convenience store is E. Honda's bathhouse (It says "Honda Bath" in the red lettering), whose interior is a background in Street Fighter II.

I'm surprised not to see any mentions of the river raft stages in the Virtua Fighter series. I've always enjoyed those the most, though in general I like VF stages.
Also, interestingly enough, I enjoy most of the levels in Power Rangers: The Fighting Edition, especially the ones where you're a Megazord or giant monster battling it out in front of small buildings. It really does capture the feel of being enormous. Good stuff, that.
