Very hard to say about the meaning of progress, as you have to try something different to get different results. Granted that I'm not very likely to play FF II and III again, I do respect the contribution that each bring for the future series - the airship Cid came from FF II on-ward, as well as defined heroes (FF I is very blurb on your characters); FF III brought us the character jobs (Onion Knight!) as well as Moogle.
Compared to that, if you look at the Dragon Quest series, the combat interface almost remains the same (as well as enemy designs!), with the storyline being the deal-breaker. And for me, it always seem that DQ is all about the grind-fest.
I know people will have different opinions on each FF title,
BUT
I will say that the iron rule of all gaming is to ENJOY the experience of playing the game.

Re: First try at a Final Fantasy game
this thread inspired me to fire up FFI: Dawn Of Souls again. FF was my 2nd RPG (after Dragon Warrior), and it holds a special place in my gaming history. I just fucked up Garland and crossed the bridge... that scene -- when you get to the actual Intro to the game -- was so cinematic in its day. It still feels (for lack of a better word, sigh) "epic".
