The info IS out there, I didn't come up with this stuff on my own. In a nut shell, all you're really doing is removing the mask ROM and replacing it with an EPROM or some kind of memory. There's a little more to it than that, but that's basically all your doing.
It IS a lot of work, but it's not necessarily hard or anything if you have the skills. I would NOT recommend trying it if your experienced in soldering. You also have to be willing to spend the time on it, and the money to get all the necessary equipment.

I'm amazed I never saw this thread crop up before... these all look amazing! Great job on your work because it seems to definitely be paying off with how authentic they look and how the forum members seem to be enjoying them!
I'm really quite interested in these and would love to buy some from you.... However I can't say I've got funds right now, so don't take that as a 100% yes thing. Mostly, I just wanted to commend you and express my desire to (hopefully) buy one or two in the near future.
Thanks for the compliments! They're always much appreciated. I'd be more than happy to make a cart or two for you, if you ever want one. Just let me know.

Thanks, I think I'll take you up on that offer. At your own convenience, the next time you come across one at a cheap price I'll take it. No rush at all.
