That makes sense. I would get the same result on a non-working NES I had a while back.
I'm going to try one last thing tonight when I get chance. Supposedly holding RT + Y while powering on the 360 will reset it to the default video settings. If this doesn't work, then the hunt for new cables will begin.

Well I managed to get the cables working again (sort of) by using the RT + Y boot up trick. Although, now the 360 is randomly resetting as if the lead is being switched on the cable. Like I mentioned before, I'm not sure why there is an SD/HD switch on an s-video only cable, but that's what is causing the problem after all.
The seller has already shipped me new ones, but if the lead switch on those causes me problems too, I'll just have to hunt down a switch-less 360 s-video cable.
