I cater on a smaller scale, my profit comes straight from the preparation of the food/drinks, and the service. For most repeat clients, I'll charge a small fee on top of the cost of the ingredients. It's almost a stress relief for me now, as consulting has been nuts.

I always found completely ludicrous the prices charged for drinks in establishments (discos and such are particularly ridiculous). In some cases it is very easy to see the astonishing margins in action, because some of those drinks you can buy in the supermarket and it is very likely that many of the places get them at cheaper prices than those (but I reckon some smaller places will just get them from the supermarket, and they have to cover the wages and so on and make a profit).

We are talking about prices that seem typically more than 100% margins (i.e. more than double of what they cost the establishment). And in wines (which I don't drink so I haven't paid so much attention to) even 100% can be a huge amount, but the %s are even higher as well I think.

Yeah, I'm guilty on that too.
You mostly see this in haute cuisine restaurants, as it also helps pay the sommelier's paycheck. It's common practice to see a $12usd chianti go for $30usd at a restaurant. I'm looking at you Finelli's Cafe.

Didnt see that it was changed, and went by one on the way to work yesterday - line was outside of the building and it was 0645...yeah, no.

Funnily enough, I had pancakes for dinner last night. Got a couple cavities filled and didn't feel like chewing. So it was soft fluffy deliciousness at 7 pm for me. :D
We are prepared to live in the plain and die in the plain!
