You can also change your computer's Font Sizes from the Appearance Tab of the Display Properties, or change your computer's DPI
Display Properties -> Settings -> Advanced -> General -> Display -> DPI Setting
To change the font smoothing on a mac you need to go to System Preferences > Show All > Appearance and right at the bottom there are the controls for font smoothing. This changes the anti-aliasing of the font making text on certain fonts easier to read.
There's no way to change the DPI setting on OSX without editing the xserve configuration using Terminal. Even then I'm pretty sure that won't change any apps using cocoa or quarts. I actually like the 72dpi setting OSX has by default. It's easier on the eyes.
