I don't think that will work. I think the Wii Guitar Hero games will only work with the Wii mote. It wouldn't make sense to support the Gamecube interface since there were never any guitars available. Using a PS2->gamecube is an option not available to most consumers.

Plus, I would rather have the guitar be wireless.

WII GH games doesn't use gamecube ports.

it also doesn't used wired guitars, as it operates on their wiimotes plugged into the guitar.

I knew there was no GameCube port of GH and I knew how the Wii version worked... I was just wondering if anyone had ever tried it. Just because it wasn't made that way didn't necessarily mean it doesn't work that way. It looks like I won't get lucky.
Oh, well I guess Ill have to shell out $ for the real thing.

Think of it from a software developer viewpoint. Adding additional control interfaces means additional coding/testing...in other words, more money/time. Why would they try to support an interface (Gamecube guitar controller) that doesn't exist?

I think it's disgusting the amount of money they charge for the Wii GH. It's a joke.

Over here the Wii versions of GH are the same price as the other platforms. Yet, all you're buying is a shell. All the work is done by the remote. With the other platforms, you get all the wireless gubbins and accelerometer. Why are you paying the same amount for the Wii version when you're getting an inferior product.

This option might work for you.

http://dealextreme.com/details.dx/sku.23206

It's a PS2 to Wiimote adapter.

Here's a feedback from a user on that page.
ordered the item 1st week of november but i got the item 1st week of january. maybe its christmas season thats why its delayed for that long or our post office here in my country sucks.

anyway, the item WORKS!
tested on both ROCKBAND: BEATLES and GUITAR HERO using my old PS2 guitar and so far its working 100%.
