I'm not sure what the incentive would be. Game Gears are dirt cheap these days; I'm pretty sure you'd be better off buying a new one than going through the trouble of getting parts then repairing.

Throwing out working Mobos that people might need is just stupid. Sell them here on the forums or something. As for the screens, you mean the actual LCD panel, not the little protective lens/screen cover right?
Lenses/screen covers can be easily replaced by simply peeling them off and applying a new one, as for screens they're replaceable but you need some soldering skills. Look at this to see what I mean:

The mod in that thread is more expensive as he also installs rechargeable batteries and the screens needed for a Nomad are larger and run at a higher resolution than a GameGear. Replacing the screen in a GameGear with a modern high contrast easily viewable LCD Display should be much cheaper in the $15-$20 range ad will be well worth the end result.

Unfortunately the GameGear does not use a video signal that can be easily interpreted by modern LCDs. It uses some weird proprietary system which means that replacing the screen with a new one is not really an option. I can't really answer your question but I just wanted to warn you that I once ordered a 'replacement screen' from sega-parts.com and just got the plastic thing that covers it. Someone made it a lot easier to hook up gamegear to a TV (or replace the screen with a newer LCD):
