I just finished Valkyria Chronicles. I have complained about various aspects of the game like load times, lowsy rank system and other things in various threads here, but the story left me satisfied and I loved the art style and overall presentation as well the game's sincere effort to break conventions. It's a credit that for everything that frustrated me I still kept coming back to it
So now I'm curious, what else does the PS3 offer in terms of rpgs? I'm already well aware of Demon Souls and Disgaea 3. Any other notable titles?

PS 3 RPGs

Cross Edge has an interesting battle system, but no story worth mentioning. Yes, the story exists, but it's like a porno; it's merely an excuse to have the action happening. If you like the characters involved then you might want to give it a shot. I also recently picked up Enchanted Arms, which so far is a pretty standard JRPG. Other than that there isn't much in the way of RPGs on the PS3 yet. White Knight Chronicles hits soon, and FFXIII is coming a bit later. Then you've got Resonance of Fate after that.

I don't think I've heard of Resonance of Fate. I'm going to have to look that up

Re: PS 3 RPGs
The only other RPG I can think of with good ratings is Eternal Sonata:
http://ps3.ign.com/articles/923/923711p1.html
True, it did also come out on the XBox 360, but if you don't have it already the PS3 version is the one to grab:
"...includes new playable characters, Crescendo and Serenade, who played a major role in the plot of the game, but were not playable in the Xbox 360 version. It will also include a new clothing system, in which the player can freely change a few characters' costumes. The other extras are the two dungeons, Lament Mirror and Church of EZI. The former of which is compulsory." -Wikipedia

Wow, how did I forget about Eternal Sonata? I really enjoyed that game, and it has a really vibrant color palette that is so refreshing in this day and age.

Yeah, it's pretty much just "what's to come" with RPGs on the PS3. Also keep in mind that Tales of Vesperia and Star Ocean 4 will be coming eventually - if you haven't already played them. Aterlier Rorona and Ar Tonelico 3 are also supposed to be making their way here soon.
Thus far, the only RPGs I've played for the PS3 are Valkyria Chronicles, Cross Edge and Demon's Souls. You've already played VC, so I'll spare you on that.
If you can get past the primitive graphics and lousy story on Cross Edge, you might just enjoy it. All that it really has is it's battle system (and fan service in the form of a ton of characters from different franchises), and if you like the battle system as much as I did, that'll be enough for you.
Demon's Souls is my Game Of The Year. Hell, it may well be my Game Of The Seventh Generation. Again, light on the story, but it has a great atmosphere. If you enjoy the suspense that you get while playing a good survival horror game like the early Silent Hills, Siren, Fatal Frame, etc., you'll get a kick out of this.
Also, I've been trying to get Eternal Sonata... and it's been hard as hell. I practically trip over the 360 versions, but the PS3 version is hidden better than the Knights Templar.

Is Eternal Sonata actually good? cause after seeing unskipable make fun of it, it looks really really boring

Probably the only thing I can truly ridicule about Eternal Sonata is the annoying "informational videos" about Frederik Chopin between chapters. They totally caught me off guard, and almost gave me the notion that this is more so trying to be a game about the real-life musical composer than a work of fiction.
