Resident Evil 4 - I enjoyed every moment of this game. I never got bored or frustrated, ever. The graphics were thoroughly jaw-dropping, even after I had just gotten spoiled to Gears of War 2. The levels are hair-raising and full of variety. The guns are kickin'. This is probably one of the only games that actually made me psychologically uneasy; I mean I got seriously nervous once or twice while playing it.
Metroid Prime - the graphics are great. The bosses are very creepy and awe inspiring. The whole game reverberates with a very chilling atmosphere, like the guys who made it were paying attention to every little detail.
Zelda Twilight Princess - the production values are through the roof. The bosses were all completely epic and mind blowing. I felt really attached to the characters and even got a little heavy-hearted when the game ended.

You should get Rayman 3, Paper Mario: The Thousand Year Door, Resident Evil 4, Super Monkey Ball 1 and 2, Super Mario Sunshine, and Legend of Zelda Windwaker.

There are many excellent games for Gamecube, here are a few of my favs. I mostly stuck with console exclusives, except for BG&E which is exceptional any way you can get it. If you have a Wii, consider getting RE4, and the Pikmin games for that system instead.

Along with the usual suspects like Resident evil 4, F-Zero GX and Eternal Darkness I really like Chibi Robo which I think is criminally underrated and Resident evil Zero which has to be one of the most beautiful examples of the use of pre-rendered graphics on any console of the last generation.
