Street Fighter Alpha 3 on the PS1; the artwork was always awesome.
Some of the PS2 DBZ games had some fun loading screens where you got little mini games.
Devil May Cry 3 was great, you got to shoot and slash the words "Now Loading" and even shatter them; damn fun.

I hate all loading screens. Cartridges for life.
About the only load screens I can tolerate are the Tekken games. Pretty much because they're the only game series that seems to optimise load screens to have minimal impact on the game. Everyone else should watch and learn.
I thought I'd seen the end of load screens with the death of tape loading. Not so, it seems. Back to the dark old days.

I like how Namco put Galaga in some of the loading screens. I believe Tekken 3 for PS1 had this somewhere? Of course, I'm a Galaga freak.
Everytime I hear the theme, I think of Grandma's Boy. =D

My favorite is one that doesnt take 20 minutes...yeah, I'm talking to you Morrowind! I like Oblivion's load screens, the artwork looks pretty.

I like the loading screens in MGS2, because they display the name of the area you are entering in 2 languages, and above all, they are short.
