I didn't know where to post this, so I figured this might be the best place.
Maybe some of you know this but I missed on a lot of gaming so I am trying to go back and play those games. One of the things I discovered that its wrong to play a whole series, because its either the same experience or quality differs from one game to another(like playing all the castlevanias )
I did this mistake with some games, most notable is GTA , where I played the whole series except for 4.
All the games were great, but it was the same experience over and over again. There is nothing really different between GTA3, Vice City, and San Andreas. Each one just improves on the other, don't get me wrong its all good and fun, but its like playing Sonic 1,2,3(is this the knuckles one?) in one go, instead of enjoying Zelda, Mario, or Donkey Kong.
Now I thought of some famous series, but I am going to play just one of them, and I will let you pick this one for me, and on which console. If the series varies a lot,like Link to the Past and TP its ok to name both, but nothing like Metriod prime.
Please do try to pick games that are not on ps2,3 because I don't have those systems, but if you must then oh well.

Do you have a tendency towards certain genres?
Out of all of those, I'd pick Super Metroid on the SNES first. Very good game all around, and I've met very few who didn't enjoy it.

My pick is Mega Man. Out of those.
If you go with Final Fantasy, do not go with Mystic Quest. And in my opinion, don't even go with VII... go with VI.
As far as RE, get the Gamecube version. It's amazing. It's a total remake of the original that pretty much perfects the game.

I reckon you want a suggestion to each series. From the series that I know.
- Castlevania: Symphony of the Night: Great game all around, yet to be topped by any other entries in the series.
- Devil May Cry 3: Even better than the first one. Difficult, but manageable.
- Final Fantasy 6: Fun game. Interesting mechanics. I'd recommend FF8, but I could get stoned - while I think the junction system is very good and I even like the story of the game, I'm pretty much alone in this opinion.
- Mega Man 2 or 9: Mega Man 2 is an easy game, great to pick up and with really memorable soundtrack. As I understand, 9 is like that as well, and even more polished in some areas. I would recommend Mega Man 3, but I think it might be a little on the difficult side for you (and you said you get easily diverted when playing games like these), for its longer levels and the absence of a game breaking weapon.
I could also recommend games from the Tomb Raider and Nightmare Creatures series, but, honestly, I don't think they're worth your time. Tomb Raider games have aged poorly, graphics look bad and the control is rather primitive; newer entries are not that good either. As for Nightmare Creatures, I didn't even realize this was a well known series. Such bland games. You're better off with Devil May Cry.
Fallout 1 and 2 are pretty good (and very cheap at GOG.com), but someone might say that Fallout 3 is better for you. However, the first ones are very different from the third, so you might want to evaluate them separately.

Didn't you just say you were going to play Zelda a couple days ago? Anyways, I'd go for Castlevania SOTN as well, probably the greatest game ever made. Fatal Frame II and Silent Hill 3 are great games as well if you like horror.

You said to try to stay away from PS2 picks, but I can't resist because I'm a huge Silent Hill fan.
My recommendation for that series is either 1 or 2. My justification for this pick is that the mechanics of Silent Hill are largely the same throughout the series (although they do get more action-oriented as the series progresses), so battle mechanics are not the thing that will let one part of the series stand out. You're playing Silent Hill for story and atmosphere, and parts 1 and 2 do that the best.
Also, within the chronology of Silent Hill, part 2 is only a very loose sequel to part 1. You don't need to play 1 to fully understand 2; in fact, you can probably play them out of order without ruining anything for yourself.

With Castlevania there are two very distinct styles of game in there. The first is the old style, which is a platformer with some really nasty parts designed to kill you. The second is the Metroidvania style, which takes many cues from Super Metroid. For the former, I'd recommend playing Rondo of Blood (Turbo-CD game, also ported to the PSP), and the latter I'd recommend SotN like the others.
