My understanding is that GCOS is just a BIOS. I have the Viper GC Pro and I put GCOS (the *.dol) on the flash memory. I find that most games run better with GCOS rather than the Viper BIOS. So I'll boot the cube up, then I select the GCOS bios and boot that. Then I can run a backup DVD.

Its good if you want to burn multiple games onto one DVD, however the downside is some games have problems when using GCOS such as Zelda WW, if you try to look at your map, the game will crash if your running it from GCOS.
An advantage is you can force it into running at different resolutions (They dont always work however).
