I have more realistic ones (Shantae for GBC for example), and then more pie-in-the-sky wishful thinking ones (that 6-player X-men arcade game, a Vectrex, etc.)

Well not exactly one any more, but I suppose one of mine used to be Keriotosse for the Saturn. I finally got a copy from Ebay and now there is usually at least one on there. It's strange how some games seem to have cycles of availability. I have no idea what drives it.
