Re: Which one
Yeah, and if you don't mind downloading games and aren't bothered that 20 years down the line you won't be able to get games onto it that aren't already I would recommend the go.
Otherwise get a PSP 1000 with custom firmware already on it or get one with 1.5 firmware so you can do it yourself easily.
Although those Dingoo handhelds look pretty cool. Emulators, and multimedia support.

Re: Which one
I would definitely go with PSP. It will meet all multimedia criteria (music, videos, browsing internet) and has a great selection of titles like God of War: Chains of Olympus, FFVII:Crisis Core, Patapon, Loco Roco, and Resistance:Retribution to name a few. It is also easy to mod/hack with custom firmware for Roms and Emulators with PSP-1000 or 2000 series.

Re: Which one
Since you're looking for a multimedia device, I'd get a PSP 2000, and get it hacked.

Re: Which one
I've had all three for some time, so I can reasonably compare the three from my personal perspective.
I'm not too concerned about multimedia so I probably end up using the DS the most, but for Internet browsing and music I definitely would use my iPhone.
For video I'd probably go with the PSP (unless I downloaded a show or something from iTunes, which I rarely would).
In terms of homebrew a PSP with custom firmware is definitely the way to go.
In conclusion, if you only want to carry one device plus a phone (and can afford it), I'd go with a DS and an iPhone. If emulation beyond the NES and Genesis is a must, then go with the PSP instead of the DS. If you don't need a phone/can't afford an iPhone plan, based on your preferences and needs I'd say go with the PSP exclusively.
Edit: You said an iPod Touch, not an iPhone... so, pretty much ignore everything I just said.

Re: Which one
PSP-1000 (get a PSP-2000 if your desperate and don't want to go secondhand).
AVOID THE PSPGO AT ALL COSTS. It's not properly hackable yet. It could be some time before kernel mode homebrew works on the device.
The DS can do homebrew, but it's small screen only really lends itself to NES/GB emulation and GBA games (if you don't get a DSi). The PSP is far superior if you use it for homebrew, however the library of retail games is better on the DS. So if you like the kinds of games the DS has then you won't go wrong with one, however it doesn't have much scope for multimedia, the PSP is much better in this regard.
If multimedia is a main priority then go for the PSP, the iPod Touch while excellent for multimedia, just doesn't cut it in emulation or gaming in general, there's plenty of great games but none that can rival some of the best games on PSP/DS.

I have a PSP-2000. Love it. It is pretty easy to hack and once you learn the ropes, really easy to get homebrew working and find emulators and roms/isos
