Well we all know that the funniest part of the movie is when they show the Star Destroyer (or equivalent).

I think that the movie had to go way off track in its parody humor to avoid copyright (at least, that's the only good reason I can think of). They really left any material from the actual movies behind in favor of unrelated humor, which really hurt it for me. Good thing Mike Myers was in it.

I think you're thinking of the wrong movie, Mike Myers wasn't in Spaceballs.

Also if they didn't have any original material left then where did all of the references such as the princess on the lam, droid, anthropomorphous blob, wookie knockoff, beat up starship, desert planet, sand people, exploding death machine etc. etc. come from?

It's not intended to be a Family Guy or Robot Chicken style Star Wars spoof, it actually came up a unique and individual plot that lampooned Star Wars and late 70's - early 80' sci-fi as much as it held it's own as a movie separate from it's source material.

I realize that I phrased that poorly, most of it was differences in the plot. All that "Stealing air" was pretty detached from the original movie, and there was no Luke equivalent to speak of.

I guess it's the fact that I grew up with re-runs of all the old Mel Brooks movies on cable that the liberally applied continuity and satire tends to stick to me more than most, stuff like History of the World still hasn't ceased to be funny to me even after seeing it at least 30 or so times.
