The Wii version is definitely the definitive iteration. 16:9 and 480p is just stunning. Plus you get the exact same game the GC got plus a better control scheme (and the option for you 'purists'* to play with a GC pad) instead of the cut down washed out mess that the PS2 version was.

Since my RE4 experience was with a PS2, that last statement made me want to try it on Wii more. I don't care for Resi games either. Slow and cumbersome. I mean even the combat in Mass Effect was more fun. At least RE5 does away with the survival horror moniker. I thought Resident Evil 4 was a fucking incredible game, but a very poor horror title. I'm not a huge fan of horror titles anyway though, so it wasn't incredibly offensive to me like I'm sure it was to fans of earlier entries in the series as well as other franchises such as Silent Hill. The over-the-shoulder viewpoint just doesn't work as well because you never feel like you're not in control (not that the monsters or environments were particularly scary anyway); entries like Code Veronica had that camera that would suddenly shift on you and often times creep you the fuck out with some new startling imagery. Plus enemies could creep up on you from off-screen and scare the shit out of you. That's alot harder to do from a behind-the-shoulder perspective.
Then again, isn't Fatal Frame like that too? Fatal Frame's creepy as all fuck now that I think about it. And F.E.A.R. had its moments, despite being first-person (Fuck. That. Air-Duct). Eh... yeah, it's a combination of factors. Still, I enjoyed it more than I enjoyed the previous entries.
