So let me see if I understand this. I could snag a cable like this, and it would pull RGB from the SNES and feed it into a high-quality converter like the XRGB, which would turn it into a line-doubled s-vid or DVI output??

Yes, but don't buy that one. It's not compatible with the Japan region XRGB.

Here you go. This one will work. This is the official Nintendo Japanese cable. I use the same one and it works perfectly. Any European/Pal scart cable will not work on Japanese ports like the XRGB uses.
