Super Street Fighter 2 Turbo. Forget extra animations. Just stick to graphics. Extra animation frames might throw of move timings and we know how balanced this game already is. Plus, rehashing Street Fighter is something Capcom already does very well ;)
The original Raiden (or even Raiden II) could use a sweet, 3D-styled, remix. It would allow for enhanced depth and shrapnel effects, something the game was already famous for.
Shining Force III (entire saga). Enough said.

I heard rumor of a Space Channel Five part 3. I want it.
A remake of FF 7 on the PS3 would make me seriously consider a PS3. And they know that. So why don't they DO it already?
I think Puzzle Fighter is an excellent contender for an XBox Live Arcade game.
Lastly, while I wouldn't be upset to see another Jet Set Radio, they have tried that twice now. I got JSR:Future and SegaGT(or something like that) on one disc for $2 from Gamestop. Good stuff.

Shenmue I & II (combo pack) - get the world ready for Shenmue III
Final Fantasy VII remake - 10 years since the original was released. I'm sure there are pleny of people who have never played the original it who would now - and all of the old fans would have to buy it anyway.

I just got JSRF for the xbox to play it again, although I like the DC game better. If they could go back to the old formula of tagging + cops in the main level, that would be a great thing.
2. Panzer Dragoon or Rez.
Both games are awesome, but I'd have to be crazy to expect a sequel for both, at least anytime near each other. Orta was the shit, but I love REZ more, I think.

A new Power Stone w/ ONLINE multiplayer would be awesome. I'd play that like nothing! It's still one of my favorite party games, probably because I whoop so much ass at it.

I would also like to see remakes of the following.
Blood Omen: Legacy of Kain - It's difficult playing the first LoK game, it's very slow and could really use a remake.
Resident Evil 2 - The remake of the first RE was very well recieved and really stands the test of time as an example of the Gamecube's potential power. Imagine what a remake of the second game could be like. Besides, RE2 was my favorite.

I would hate to see time wasted on an FFVII remake unless they tried to fix the broken characters and broken story. I know lots of people got really choked up over FF7, but good golly, people, the level of character depth and story development was actually quite pathetic. I have the feeling the stock characters, weak dialogue, and overwrought lead character would not go over nearly as well today as they did then.
The thing is, it would. The game is beloved by so many. They would rebuy it if all they did was upgrade the graphics and change nothing. Things like Virtual Consoles, GBA ports of SNES games, and compilations are proof enough that people are even willing to rebuy the game if nothing has changed most of the time, whether or not they lost their original copy or whatever.
When I said I would like to see FF7 remade, I would like for them to add in extra story plot, expand on the original battle system, and some other crap people do when they care about remaking a game.
And besides if a game like FF12 can sell really well, which has horrible character development (almost zero actually), uses a stock story, and actually has a terrible battle system, I'm pretty sure anything else would go over fine.
