There's a great gameplay control mechanic in the PC version of this game (not there with the DC control scheme) which really pushes you to make the most of your 2 stage boost by only letting you apply it in a straight line - and the simple high speed graphics and cool stages still look great. I personally feel like Wipeout 3 has held up tremendously well. It still impresses me every time I play it.

Anyone recall Extreme G for the N64? It was Nintendo's version of Wipeout but with bikes instead of hovercrafts. I loved that game just as much as Wipeout.

I listed it above because I LOVED Jet Moto and used to play it in college with my roommates all the time - and the sequel was even better than the first. I still play both on occasion. Totally agree with Ridge Racer Type 4. It plays like a dream and I can easily get friends into it today.
I have to mention Rage Racer but I cannot say it truly holds up because of the glaring lack of multiplayer. The game is great and it contains some of the best tracks and music in the series but the inability to play with friends hurts this game bad.
Wipeout XL - this one is a classic. Probably the fastest game in the series and the sound track is one of the best in video games. Just do yourself a favor and hunt down a NeGcon...
Tokyo Xtreme Racer 2 - Once you get used to the physics, this is the Armored Core of racing games. The Wangan seems to go on forever. If you are willing ti put in the time you are rewarded with stupidly fast cars and white knuckle races. Unfortunately you'll need a cheat code or a hacked game save to beat the final boss.

SNES F-Zero is also my favourite of the series. It has the tightest handling and best music. The only things that let it down are the lack of 2 player, lack of ability to "win" cups and only 4 cars in a race.
We need a new F-Zero in the style of the SNES original for Wii featuring 2 player, 30+ racers and online mode. Oh well I can dream...
