Silhouette Mirage
R-Types
Pocket Fighter
King of Fighters '99
Breath of Fire III
Rhapsody: A Musical Adventure
Suikoden
Legend of Mana
Rayman
Mega Man X4
Mega Man X5

(Man, I guess I need to get some more 2D games for my PS1... I pretty much bought 2D games only for the Saturn.)

The combat system was rendered in 3D, but overworld and dungeon crawling gameplay were 2D.

Strider 2, which was just badass
Klonoa
Mega Man X4(5 wasn't bad either)
The Oddworld games
Castlevania:Symphony of the Night(f**ing masterpiece)
Darkstalkers 3 for the cool rpg like create a character mode that wasn't in the Saturn version
Panzer Bandit
Grandia(was nice to have it in English)
Xenogears for the 2-d visuals

Does Einheinder count? How bout Rival Schools? The gameplay for those two was 2-d
