This is what I'm trying to do with PS1 as of late. I've slimmed down all my other consoles to the games I really want, but I've been exploring and collecting mainly for PS1. That really seems the best way to do it. Take it one console at a time. Right now I'm completely focused on my Saturn, as their are so many games I have yet to get for it (Darius Gaiden, Duke Nukem 3D, WipeOut, Dragon Force, Astal etc.). I'm big into original boxes for my stuff, and THAT is killing me. System and peripheral boxes take up a lot of space, so it's a struggle to find storage for them. I finished my basement for gaming, but I still don't want a bunch of crap making the place look like a junkyard.
Of course, I won't admit I have a problem until I rent a storage locker.

Perhaps once I've completed my Saturn collection. Although I am very close to doing so and suspect I will then move on to "every other" Saturn game, then the PS1, PS2...okay, so maybe I won't finish, but at some point I can see myself halting the madness.

I imagine I'll have to stop eventually. I've never been interested in having every game for a system, although if I ever get really rich I might go for it.
I have a list of about 150 games I want to get for nes/snes/genesis/saturn/dreamcast/ps1/n64/mastersystem/. I find out about games I've never heard of a few times a week and add them to the list. But since there's no new games coming out for these systems I'll have all the good ones eventually. And there's some genres I don't play at all like sports/rpgs/strategy so that saves me money.
My goal is more quality than quantity I guess. Although I don't worry about boxes for snes or nes games and I don't even really worry about manuals most the time either. If it looks good on the shelf I'm happy. When I get a house (soon hopefully) I shall have an awesome gameroom. I am planning it already. . . . .

I simply got into the hobby because I wanted to own the good games that I played but never owned throughout my childhood. I originally only wanted those games for the NES and SNES, but then I came across the 3d0, then the Sega, then the Dreamcast... But sure, one day, I'll probably stop......

I think for true collectors it isn't so much much about having collected enough, as it's more about the thrill of collecting in general. I'm currently sitting on close to 900 games and over 20 different consoles and I can tell so many stories about the gems in my collection. Like my like-new copy of the American release of Panzer Dragoon Saga that I managed to pick up for 20 bucks! Or the Panasonic 3DO I found at Goodwill mistakenly thrown onto a shelf of old VCR and DVD equipment for 5 dollars because they said it was "non-working" unit (a.k.a. couldn't get it to play DVDs). For me its more about the thrill of the chase and less about the time I get to spend playing. I have a 9-5 job and a wife who is currently in school so I'm left with very little real playing time whatsoever. But that doesn't mean I'm going to ever stop collecting.
Currently owned; Colecovision, Master System, TG-16/CD, SNES, Genesis/CD Mk1/32X, Saturn, Dreamcast, Jaguar/CD, Xbox, Wii, and PS3!!!

My room is tiny. Every time I get a couple of games or DVDs, I need to rearrange everything to get it to fit. I always find room. As long as this is my hobby, I will never stop collecting. Plus, most of the games I pick up, I plan to play. This summer, I will be playing a multitude of games I collected over the year that I couldn't play earlier due to time constraints.

I have 300-400 games now and I'm no where near stoping. I still want a Lynx, N-gage, PSP, NES, SNES, Genesis, and X-box. Thats a lot of games I still have to collect! I think even with the limited amount of space left in my room, I will keep collecting because just finding great deals on games can be as fun as playing them!
Edit: me gots an N-gage now and over half the library o' games
