I also play only one RPG at a time or I will be overwhelmed and forget important parts in the story. I believe I never found myself in such situation (maybe with books). I'm probably too obsessive to start too many games at a time. Whenever I start playing an RPG, I commit to it and spend ridiculous amounts of time with it. I have too many huge RPG saves on my memory cards I'm never gonna touch again, 'cause I just think I've milked every drop of gameplay the games had to offer (also, I probably became too powerful in every one of them).
Funnily, I don't have any patience for games like MMORPGs, which are actually designed to make the player spend obscene amounts of time with them. So, while I spend too much time with RPGs when I start them, I would also probably get bored fast with Monster Hunter.

Right now I'm playing Valkyria Chronicles, KOTOR, FF 8, and Panzer Dragoon Saga. The only lucky thing for me is that each is on a different system, but I'm trying to stick with only one at a time. I got about 25 hours in on FF 8, but it still hasn't captured me...I've basically forced myself to play it that long hoping that something cool would happen.
For what it's worth, I got about 40 hours into FF XII, and haven't played it in ~2 years. Once my PS3 collection started to grow I haven't managed to pick it back up...sadly I'll probably have to start over since I've pretty much forgetten what was going on. Ho hum.

I have similar habits. Start many, finish none. I really think shorter, or at least episodic, RPGs are the best way for gamers with less time/shorter attention spans to enjoy RPGs.

I tend to bounce around as well, especially when playing older RPGs. Games like Lufia and Phantasy Star 2 have archaic battle systems that take ages to get through (and that's before the grinding), so I can only stand to play them in short bursts. Currently I'm in the middle of Lufia, Class of Heroes, Dragon Quest VII, and Black Sigil.

I don't let myself play multiple RPGs at one time any more.
I've actually gravitated away from linear RPGs at the moment, preferring ones with more open ended structures. Of course, the "never finishing" problem can become even more of an issue in those.

I have that problem bad. My thing is that I have sooo many games and most of them are RPGs, so if I get bored, I'll start playing another one. Then I just bounce around. Right now I'm playing Ar Tonelico, Mother (emu on the psp), Tales of ... something... (the PSP one), Tales of Destiny 2 (PSX), Ys Book I & II (TG CD), Dragon Slayer (TG CD), Neutopia and Esper Dream (FDS).
