I have to put in a serious play session this weekend!
Art of Fighting is a hell of a feat on the PCE-CD, and it's amazing how it manages to pull off the scaling effect pretty successfully, but overall I just feel like that's one of the SNK fighters that hasn't aged that well, so Fatal Fury Special made the cut instead.
As for the MK games; I have to admit that I've never really been that big a fan of the franchise, in general. With the 3rd game in the series it seemed like the gameplay only got glitchier, and while there were a ton of characters, but the palette swaps were pretty lame. I felt that with MK2, less was more.

It sounds like you're gonna have a fun weekend. I need to sit down and finally play Flash Hiders and one of the Asuka 120% games. Also, does anybody know if the Cho Aniki fighting game was actually any good on the SNES? Gameplay footage reminds me a lot of Astra Super Stars.

Astra Super Stars. That's one of my favorite underrated fighting games ever. I can only hope that the Cho Aniki game is nearly that good. Sounds like another one for the list...
Flash Hiders has a very cool RPGesque mechanic, where you can develop your character's stats (attack, defense, speed) over the course of battles. What an incredibly dumb title, though. That must be the only time those two words have ever been combined that way in the history of the English language.

Flash Hiders is fun but the RPG character dev aspect has some problems. If you keep boosting Bang's speed you can do his two hit advancing special so quickly that your opponent can't respond. They end up dying from block damage without every having any recourse.

Wow, after seeing a vid of Battle Tycoon (which sounds a lot better than Flash Hiders), I've GOT to get this game. I was surprised to never have heard of it before.

Holy s$%#! I just played Endless Duel for the first time today. WOW. Crisp fighting, wonderfully large sprites, and a pretty impressive animated opening, too. Hmm...well, there are a few. Culture Brain put out a bunch of fighters, like SD Hiryu no Ken, though of all of them I feel Super Chinese Fighter's the best looking and the smoothest.
Oh, since you included a Yu Yu Hakusho game, have you ever looked at the Super Famicom's? Check them out, especially Yu Yu Hakusho: Tokubetsuhen. It is the strangest fighting game I've ever played. Seriously, absolutely bizarre.
There are lots of other import fighters, like Natsuki Crisis Battle, UltraSeven, Osu!! Karatebu, Battle Master, a whole slew of Dragon Ball Z titles, and lots more, though the quality varies immensely.

My personal opinion is that Flash Hiders is a better game than Battle Tycoon. But yes, Battle Tycoon is essentially a SNES take on Flash Hiders.

Ah, I didn't realize that there really was a game just called Flash Hiders. I just searched Flash Hiders on eBay and YouTube and all it came up with was Battle Tycoon. After reading all these posts, I know you could never have a vague top 10 fighters list like this. I love me a good fighter and I'll be sure to check some of the posters recommendations.
