The hard drive has jumpers, but the Network Adapter and my IDE-to-USB adapter doesn't connect to them.

*facepalm* jumpers are what tells the hard drive controller what mode to be in, either Master, Slave or Inherit (AKA cable select). I can't remember what mine is set to, it's been such a long time since I installed the hard drive in my PS2.
Do you have a jumper block set on your jumpers because if it doesn't, AFAIK the Maxtor drives are set to slave if no jumpers are set.

Now I'm confused. How do I "set" a jumper? No cable or anything is going into that port. The only ports that have cables going into them are the IDE slot, and Power Slot.

Ok, let me break it down for you. There should be three things on the back of your HDD. There's the IDE cable port, the power port, and then a series of 6-8 pins in the middle. These are various leads that can be connected with jumpers. A jumper is just a little plastic piece that will electrically connect two of those pins. Setting the jumpers in different configurations will let your drive know whether it's a master, a slave, a single (some drives need this) or auto-detect (not all drives have). As mentioned, I believe you want your HDD to be set to master. So look at the diagram on the HDD. Does master require you to set a jumper? If so, then it needs to be set properly, otherwise you're up shit creek.

I took a second look at the drive [this time under a light, instead of in the dark], and found that there was already a jumper on the first set of pins on the drive. Also, there were no diagrams for different setups. [Like I said, I'm using the offical sony PS2 40gb HDD.]
I honestly believe this is a formatting problem. The hard drive seemed to be recognized before I formatted it with WinHiip, but did not immediately after. The weird part is that although the drive is not recognized by WinHiip, or any computer program I have, my PS2 reads it perfectly fine.

Then it's formatted just fine. This is almost certainly a hardware problem with your IDE/SATA converter.my PS2 reads it perfectly fine.
Since you're having trouble reading the hard drive on your computer, the easiest thing to do is to let the PS2 read it(since that works just fine), and copy the files over the network.
I gather from this that you tried hdl_dumb/dump while the hard disk is connected to your computer. This is supposed to work, but since you're having trouble, try it over the network. You will need hdld_svr.elf on a memory card or usb stick. Run it with uLaunchELF. Make sure it gets an IP address on your local network (ping the ip address to be sure).1. When I tried HDL_Dumb/Dump, it wouldn't recognize the PS2 hard drive, either.
Once you have hdld_svr.elf running on the PS2, you should be able to transfer games over the network.
You don't have to open the computer to transfer over the network. Just leave the hard disk plugged in to the PS2, and the network cable plugged in to the adapter. It's really convenient.2. It's hdld_svr.elf. It's not technically FTP, but the concept is the same. I use hdl_dump from the command line, IMO it's easier this way. Just scroll down to the bottom of this howto for an example of how to use the hdl_dumb client. hdld_svr.elf should have come with your distribution of hdl_dump/dumb.As a last question, what program do I need on my PS2 to accept the HDL_Dumb FTP transfer?
I get about 2MB/s with this method, which works out to about 40 minutes for a 4.3gig DVD.
